Ingredients

For the Cupcakes:

  • 1 cup all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ground ginger (optional)
  • 2 large eggs
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • ½ cup vegetable oil
  • ¼ tsp vanilla extract
  • 1 cup finely grated carrots (about 2 medium carrots)
  • ½ cup crushed pineapple (drained)
  • ¼ cup chopped walnuts or pecans (optional)
  • 0.8 ml Delta 8 oil-based tincture (Your Budz)

For the Cream Cheese Frosting:

  • 4 oz cream cheese, softened
  • 2 tbsp unsalted butter, softened
  • 1 cup powdered sugar
  • ½ tsp vanilla extract

Instructions

Prep the Oven & Pan

Preheat your oven to 350°F (175°C). Line a cupcake/muffin tin with 12 paper liners.

Mix Dry Ingredients

In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.

Mix Wet Ingredients

In a separate large bowl, beat the eggs, sugars, and oil until smooth. Stir in vanilla, grated carrots, and pineapple.

Add Delta 8 Tincture

Measure 0.8 ml of the Your Budz Delta 8 tincture (equal to 240mg total) and stir evenly into the wet mixture. Mix well to ensure even distribution.

Combine & Fold In

Gradually mix the dry ingredients into the wet mixture. Fold in chopped nuts if using.

Fill & Bake

Divide the batter evenly between the 12 cupcake liners. Bake for 18–22 minutes, or until a toothpick comes out clean.

Cool & Frost

Let cupcakes cool completely. Meanwhile, beat cream cheese and butter until fluffy. Add powdered sugar and vanilla, beat until smooth. Frost cooled cupcakes as desired.

This recipe assumes your tincture is 30ml = 900mg Delta 8. That equals 30mg per ml.
